What is the bar reflecting when it shows a bar for a day that I have not entered anything for? At the beginning of the day I enter my caloric intake and notice that on the bar graph there is a calorie intake and expenditure. Is there an assumption?

The bar for calories out always reflects your BMR (basal metabolic rate), or the amount of energy used at rest. This value is calculated using your current weight, age, gender, etc. Note that the bars will only show up on the chart if there are calories in and calories out, so if you haven't logged any nutrition data, you won't see a bar for that day.
